Mary is now 88 - her mum lived until she was 105, so I reckon Mary has a few years left! I was wondering why her left hand looked a little odd. Well, at 13 she contracted polio which resulted in her having a twisted spine, a weaker left hand and thinner left arm. She spent 3 months in hospital and said that the period of forced separation from her family while in the hospital "toughened her up" and taught her to make the most of every opportunity she would have.

Did I ever tell you about the time I came into the kitchen and asked Dad, "Is that chicken stuffed?" He looked down at the chopping board and said, "Well. It doesn't look good from this angle."

Mary had a much more aristocratic accent as a young lady than presently.

My Mum told me, if you are cooking most things, don’t use spanish onions as they don’t cook down, they are too thick skinned - she said:- “Use those scruffy old english onions in the shops.” In this recipe, spanish onions are good for spanish chicken, obviously.

I'd make several modifications to that recipe. I'd certainly use red onions instead of white, as well as chicken breast alone. Sliced black olives would be my choice, but I would omit butter altogether - possibly substituting it for olive oil (what else?!). Also, pink Himalayan salt is ALWAYS preferable to white. I'd still eat it, but I'd feel better (less lethargic and inconvenienced) after the modified recipe! ☺️ Really good presentation, and very well explained.

All I can say is that it was the '70s. 😉 That said, I think it's great to be able to find a recipe and modify it to your tastes and preferences.

In the 70s there was much more of a focus on cost in cooking programmes which is sorely lacking today. I suppose most people would use chicken breast now, a shame because they are more expensive and inferior in flavour to the brown meat

i'm wagering this is more likely 1980 or 78/79 as it seems a bit too good for before even with pro film storage taken into account. Unless its well tarted up with some kind of AI restoration.

Mary Berry was quite "arch" in those days, like a Domestic Science teacher. I prefer today's version.

Insert obligatory - CROSS CONTAMINATION comment about how often she manhandles the raw chicken and then moves on to other food prep without washing her hands or the cutting board. Also the sound engineer should be fired given how half the video we endure the loud crackling of the fried chicken parts.

@@fraserkatieIt's the sound of the chicken frying off camera; which is what I said in my post above. The sound engineer should be fired as they should have fixed that in editing or pre-production. But then, this was a long time ago and British television from this ear isn't exactly high standard produciton values.

It's the 1970s get a grip! The show was also filmed live back then so she is on a timer. She probably knew this so they might of just thrown it away after filming.

Chicken matured in the fridge. Thank goodness everything is already matured in the stores in the USA so you don't have to do it.

Absolutely no regard for food hygiene/safety here whatsoever. Just bungs everything else on the chopping board which she'd be cutting up raw chicken on.
