OMG..I never knew. I was a at risk kid and came out of it by cooking.Ive been cooking for my elderly neighbors and the homeless for years. Thankfully I found a career and now have entered the bbq realm. Still giving after all these years. Cooked for my military unit and now for my Corrections family. Coming into retirement and still giving back to my community. Love this lesson on the history of your start.God bless

I want to thank each one of you for your contribution to this video. It’s super informative, educational, and funny as well. I have always enjoyed watching Harry Soo cooking on TV competitions. It is so refreshing to learn about his life and background. He is truly a very special person. Thank you Justin for producing this video. Having all those KZbin publishers on there was a touch of brilliance. I vote you the guy I would most enjoy sharing an adult beverage with; maybe 2 ;-)

Love you too, Harry. You don't talk too much. I was kind of amazed looking back at the footage how organized your thoughts were. It felt chaotic at the time because there were 5 of us all shooting different videos for different channels so I didn't know what I had. I was really impressed how well you covered all the bases really well. It's like you've done this before. lol. Have a great rest of the weekend.

I love watching these guys. I can tell that Harry is definitely someone that most people can mistake for a "know-it-all" and very talkative. However I see someone who has found a life saving hobby and has just put so many hours perfecting method after method and absolutely enjoys spreading the Holy BBQ Gospel! I value all the information that he's willing to share!

This is a fantastic episode ! I'm a great fan from Harry Soo. I learned a lot from him. I can remember as Harry answers also questions in the great forum TVWBB, which was also super informative. He knows how to transport the spirit of BBQ throughout the galaxy :-). Of course I am also a longtime fan of T-Roy, What's New BBQ, Aim'em & Claim'em Smokers and BabyBack Maniac. I guess this video is so impressive to be because all my favorite pit masters are participating! Great job !!

Justin , I've just rewatched this video. It's awesome to watch. Of all the points Harry makes its the cook with love that really sinks in for me. The 4 of you guys in this are the only 4 bbq gurus I subscribe to and I hope you keep going brother. As Harry says , spread the bbq love!!!.

Howdy Justin. I remember this video when you released it about 2 plus years ago. At that time I had no idea of who Harry was and might not have ever known if not for you. It was great rewatching this again. I caught sooo much that I had missed the first time. The time I took both him and Donna fishing and watching him grill salmon at my place would never have happened if not for your vids with him so somehow I owe you a really big favor I hope I can repay someday. Lastly I'm about a week behind for having my first video out. I hope to have it out finally in the next few days. It's going to be a introduction and showing of gratitude in the first. So no cooking, but they will start after that. Anyway have a great day and let's all stay positive for this new year. 😃👍🔥

Great video, Justin! I especially found it interesting that Harry took no credit for the “Soo’s Donut” method he used in setting up the WSM. He instead referred to it as the “Minion Method”, though his uses a center cavity & Jim’s does not. This little nugget just shows Harry’s humility. Thanks again for sharing!

I think this method predates both of them. I remember hearing about it long before bbq pit masters. But you are right, he is a humble guy. Lot's of people would be tempted to take credit for things they didn't invent. We all learn from each other.

What a great guy! I remember watching BBQ Pitmasters when it came out and always liked it when Harry got some camera time...he was the "underdog" with the WSMs vs. the fancy rigs.

So... I tried this and I was so scared that I was not going to be successful. Conditions were a bit different, and I don’t have a fan for controlling temps but was able to loosely follow this guide. I had to trust my little experience, the temp of the meat as well as the feel of it with the probe test. Probably the best brisket I’ve made. It was not perfect but great experience for cooking a 12# brisket in a much shorter time frame. Thank you guys for all of the information and for contributing to my “bag of tricks” ;) Because I had to step out of my comfort zone cooking hot and fast, It taught me to rely on temp and feel and characteristics of the brisket vs following an exact step by step procedure.

Great video. I haven't done a brisket under 300 in a while. I haven't done one at 400 but I'll definitely give it a try. I had really good results doing one where I started it around 350, then dialed it back through the unwrapped portion of the cook to 300.

This is by far the hottest I’ve ever cooked one. One of the best ones I’ve done was at 350 but never 400. Turned out great

I'm going to try embedding wood chunks now since I've alway put them on top. Should be interesting to see if there is a noticeable difference. As a WSM smoker, I'm always grateful to see detailed videos on WSM cooking methods. Thanks for posting this. Now I'm off to search for Happy Days videos for some reason....

Really cool video...watching it makes me wish I was there! How cool for Harry to stop by and sling knowledge all over the place. I want to give this method a try with my pellet smoker. It will hold 400 with no problems and doesn't have any hot spots so I wouldn't have to mess with rotating the brisket. Its hard for me to wrap my head around cooking a brisket in that short of an amount of time because a nice size packer brisket always takes 14-18 hours low and slow. I have to admit, judging by the videos you gents put out of this cook, the results seem amazing! Also I want to tip my hat to Harry for his program for disadvantaged kids....respect, sir.

From watching a lot of Harry's videos he prefers the bullet type of smoker. I have seen him use other smokers but his go to seems to be the bullet.
