OMG..I never knew. I was a at risk kid and came out of it by cooking.Ive been cooking for my elderly neighbors and the homeless for years. Thankfully I found a career and now have entered the bbq realm. Still giving after all these years. Cooked for my military unit and now for my Corrections family. Coming into retirement and still giving back to my community. Love this lesson on the history of your start.God bless

This is a fantastic episode ! I'm a great fan from Harry Soo. I learned a lot from him. I can remember as Harry answers also questions in the great forum TVWBB, which was also super informative. He knows how to transport the spirit of BBQ throughout the galaxy :-). Of course I am also a longtime fan of T-Roy, What's New BBQ, Aim'em & Claim'em Smokers and BabyBack Maniac. Great video, Justin! I especially found it interesting that Harry took no credit for the “Soo’s Donut” method he used in setting up the WSM. He instead referred to it as the “Minion Method”, though his uses a center cavity & Jim’s does not. This little nugget just shows Harry’s humility. Thanks again for sharing!

I think this method predates both of them. I remember hearing about it long before bbq pit masters. But you are right, he is a humble guy. Lot's of people would be tempted to take credit for things they didn't invent. We all learn from each other.

Howdy Justin. I remember this video when you released it about 2 plus years ago. At that time I had no idea of who Harry was and might not have ever known if not for you. It was great rewatching this again. I caught sooo much that I had missed the first time. The time I took both him and Donna fishing and watching him grill salmon at my place would never have happened if not for your vids with him so somehow I owe you a really big favor I hope I can repay someday. Lastly I'm about a week behind for having my first video out. I hope to have it out finally in the next few days. It's going to be a introduction and showing of gratitude in the first. So... I tried this and I was so scared that I was not going to be successful. Conditions were a bit different, and I don’t have a fan for controlling temps but was able to loosely follow this guide. I had to trust my little experience, the temp of the meat as well as the feel of it with the probe test. Probably the best brisket I’ve made. It was not perfect but great experience for cooking a 12# brisket in a much shorter time frame. Thank you guys for all of the information and for contributing to my “bag of tricks” ;) Because I had to step out of my comfort zone cooking hot and fast, It taught me to rely on temp and feel and characteristics of the brisket vs following an exact step by step procedure.

Great video. I haven't done a brisket under 300 in a while. I haven't done one at 400 but I'll definitely give it a try. I had really good results doing one where I started it around 350, then dialed it back through the unwrapped portion of the cook to 300.
