The heart is something you eat as soon as you get the deer field dressed and put away. I have always had deer heart the day of the kill. I like mine rolled in egg, seasoned flour, and deep fried! Awesome video guy!

I cook the heart in bacon grease with a little bit of butter and Buffalo trace bourbon. Delicious.

this is the beast part of the animal, we eat the day of kill, heart and liver doesn't get wasted in our hunts.. I've even got creative with the heart and have stuff it like a turkey and cooked that way in oven.. nice guys.. ** Northern Ontario Here** and yeah, don't over cook it lol...

Venison fat, unlike the fat from domesticated animals (beef, pork and poultry) tends to have a definitely gamy taste. Folks that have had venison and really not liked it I'd bet had meat that was not well trimmed of natural fat. Certainly, venison is very lean to start and adding some fat to it for cooking (bacon works well) is recommended.
