This was just what I was looking for! Thank you for sharing. My mom taught me to always crinkle up the foil, before laying it into the pan. That way, it gives some lift to the meat, or veggies, and the crusty skin is less likely to stick to the foil.

i make all my meals homemade from scratch. i use frozen chicken straight from the freezer to the oven. i just came for the cook time and product temperature. i used to just do the cut open and observe method for cooking. im trying to move away from that. just bought a cooking thermometer. i do not eat chicken breast. (anymore or at the moment) i cut the breasts up and put it in a tortilla and add cheese & sourcream n hot sauce. makes great chicken tacos.

Next week I am cooking 90 lb of frozen chicken breasts (from Sams Club) for a large church gathering. My thought is to thaw them out, season them lightly with lemon pepper then parcook them in the oven in covered pans at 425 until the meat reaches 120-130 degrees internal. Then sear them in quick fashion on the church commercial size griddle at high heat, and give them a final generous brushing with italian dressing and fresh basil. Has anyone done anything like this?

@FeedingYourFam
@FeedingYourFam 3 ай бұрын
Olive oil can have a smoke point of up to 470 so it works great in this recipe. Additionally, the olive oil on the chicken won’t ever reach over 400 degrees because the chicken is only cooked to 165. Hope that helps.
