OMG! Made this today, and it is the most delish pie I have ever tasted. You made it so easy with your straight forward instructions too. Just great as well during Covid-19 lockdown, because whilst I wasn’t able to get any flour whatsoever at the supermarkets...I can get ready-to-roll pastry. Yummy 😋.

Love this! I add a sprinkling of salt and pepper, a couple of tablespoons melted butter, and a splash of whole milk to the mashed potato mixture. I also use a springform pan. Fabulous!

Pete, always use COOLED filling in pastry. This is to prevent the shortening from melting prematurely. You get better flake on your pastry top, and the base won’t sog as much.

Thanks for the pie idea. My local Bangkok pub is putting on a Christmas dinner but no vegetarian option, so I'll make this and take it along. I'll bet what I don't eat will be snatched up. I love the star design -- never tried that before. A couple of years ago I instructed the pub cook how to cook fresh brussels --- I told them to boil them for 5 minutes,no more till they are al dente. I just stopped them boiling them in oil!

Simple ingredients and what a fantastic result! I'm definitely going to give this a try, it looks delicious. I was worried that the base might not cook. I've seen some people, when they make pies, they bake the base a little bit first before putting the filling in to avoid this. You didn't do this so I'm going to follow your recipe to the letter and fingers crossed, the pie will turn out perfect like yours - no soggy bottom, lol.

I have since taken to baking this pie in a steep-walled spring-form cake tin, and the results are very good because you can cram in more of the delicious filling, and the bottom comes out firm and crispy. It is also a great filling for pasties and turnovers or slices as they are sometimes called in the UK. To some extent the soggy-bottom is desirable here in the UK, but it is not liked by everyone. Pasties and turnovers eliminate the soggy bottom entirely.

Cayenne pepper is good for heart rhythm and it adds a delicious piquancy, I love it. I stuck with tradition here, but I'm a real peppermouth too 🌶🌶🌶

Tried the recipe today. It's very mild flavor . I think a little Rosemary may add to the flavor. Or even a little gammon cubed.
