The paklay I remember is a bit different than this. Paklay to my knowledge would be all beef. Some beef meat, tripe, some beef liver or heart or both, but it would always have slices of beef blood, and instead of bamboo shoots either chayote or white squash slices. And it would be a little soupy. My granmother had a boarding house with carenderia near a big Cebu college, and whenever possible when she or my uncle would cook anything, I tried to learn. And I did learn! ◙ Your recipe also looks very delicious, making me hungry. Thank you for this video, it is very interesting.
