The greener banana I cooked separately, it was still ripe enough to cook, but not as sweet. I’ve had them cooked when they aren’t as sweet also, but of course I prefer them riper & sweeter😊

Sweet or ripe plantains are nice and healthy, we call it kokoo in Ghana 🇬🇭 and we usually eat it with beans stew you should try the combination one day and you’ll love it
