I once heard Alton Brown say that he adds a thin layer of mayo on the bottom bun, not for the flavor but for the fat layer than can delay the grease from the burger soaking into the bottom bun. I've tried it and it works. It doesn't alter the flavor of the burger but it does keep the bottom bun from becoming soggy too fast.

I love that Carolina style chiliburgers are so loved by someone who's had so many burgers. It really is a treat. Chili, slaw, onions, mustard (optional but a regional favorite). It doesn't get much better and is always filling.

Represent with the Carolina slaw burger! Also if you really want to push it over the edge, add a bit of yellow mustard on top. The savory beef and the acid from the vinegar in the mustard really make an amazing combo. Just make sure you have a lot of paper towels because it is a messy beast.

@@Blimeygit Officially in NC "All the way" is mustard, onions, and chili for either hamburgers or hot dogs. Slaw is not standard, but a frequent add-on, more typical on hot dogs, but still pretty common on hamburgers too. Not aware of a specific line like Eastern vs Western BBQ, but my experience Chapel Hill and points east. (Source - worked my way through high school in the 70s at a SE NC grill, a former Dairy Queen that changes its name to Dairy Cream in the late 60s when they changed the franchise rules.)

@@robertelee63 I do not intend to discredit your experience. I've only been on this earth for 26 years, but currently "all the way" that includes slaw is without a doubt more prevalent than without, at least in Wake County.

@@54TheBeast54 I understand your expectations may be different today, but in the 70s I prepped thousands more all-the-way burgers or dogs without slaw than those who added it. Maybe today in the Triangle slaw in added, but head east. What is standard in Sampson, Wayne, Craven, or Brunswick.

Thanks for this, I tried few recepies and it's something amazing. I can actually taste some American Burgers in Poland without traveling, I learnd how to cook without burning mysefl or house to the ground and made my kids extream happy as lokal burger restaurants provide crap. So even poor cook as I am did better then loosers from polish restaurants. Definatelly I try this one as I loved chilli, habanero, jolokia or even CReaper and Coleslav is what people in PL do very good and also spicy.

Living in NC, while slaw is commonly served on chili burgers, the original is chili, chopped onions, and yellow mustard - sans slaw. HIGHLY recommended. Now, a classic, old school chili is just beef cooked very slowly with a little water and salt, until... just right 😉. I have had it with a little bit of cinnamon or allspice added, but just a light touch.

What I find interesting is that here in Quebec, we'd call that "Michigan-style" because it's simpler to communicate given that Michigan-style hotdogs are a staple here. What makes this interesting to me though is that it's basically the only imported burger recipe that I can think of that's mainstream here. Kind of like the history of the Chili Cheeseburger, if a restaurant servers burgers and chili, it wouldn't make sense not to combine them.

I grew up in Michigan then moved to North Carolina and had never seen a slaw burger until then. It it s indeed regional and even fast-food restaurants like Wendy's serve it on their menu. I don't live too far from Monroe so I should give Dukes a try.

A fairly popular version of this style in NC is from a chain called Highway 55 called the Johnboy and Billy Burger, the only difference is they opt the raw onions for fried onion rings, topped with a little mustard and a light spread of Johnboy and Billy BBQ sauce so you get a little more texture from the onion rings, little more bite from the mustard, and a touch of sweet and smoke from the bbq sauce

A place in Winnipeg called VJ's has made a chilli burger for decades. It's basically a smash burger with mustard, onions, cheese, a spoonful of meat chili and the usual veg. Topped off with a fresh, untoasted bun. It's heaven.
