Congratulations! You peeled the asparagus on the cutting board. This is a good idea because the white ones are more prone to breaking than the flexible green ones.

To give the spargel more flavor it is recommended to boil the peelings with the salt and sugar for about 10 min. Strain the water back into the pot then add spargel and boil. Much more flavor that way b

@gallen814 I know this technique but i prefer the simpler way with only water, salt and sugar. Also i don’t think white asparagus has not enough flavor, its actually quite bitter and cooking it in an already saturated fond will make it even more bitter. But as always in cooking, many ways lead to Rome :) Thank you for your tips 🙏😀 Cookswiss

Is not soft overcook? And after 10 minutes will not the tops loss its taste and texture?

Hey I think for this size 10min is perfect 👌 If they are thinner i would go maby 7-8min and if they are really thick 12-13min. In my opinion white Asparagus should not be undercooked because otherwise they are hard and raw in the inside, which i think is unpleasant. The top will be softer then the rest yes but should not fall apart, that would be overcooked. Greetings Cookswiss

Why you wash first and peeling after? 😂 Make no sense... Peel first and after..wash it!

@ Octavian Condea Good question :) White asparagus grows under the soil and is often dirty. If you don’t wash it if the asparagus is dirty you will transfer the dirt during peeling all over your asparagus. You could wash it after that but sometimes the dirt will go into the flesh of the asparagus and can’t be removed anymore. As a general rule i would was pretty much any veg before using ;) But as always, many ways lead to Rome :) Cookswiss

First rule of a kitchen wash produce before prep work begins. Dirt, bacteria and chemicals.

Only ON the flash..and if you wash it after the peeling..it will be clean 100% learn gastronomie and make a cooking school. No sens to debate this problem if you are only a guy who make food on youtube to make money.
