This guy is a legend. Went to one of his day cooking courses. 16 total amateurs, and somehow he managed to ensure each couple delivered their dishes for the group lunch. Incredible to watch, and the pot wash person called in sick so he did that too as he went. Unbelievable. Great lunch.

%100 correct good sir , a simple yet mostly incorrect fish to be cooked by most chefs , you my good sir have nailed it %100 . Chefs gat hammers do not over cook fish yet there are acceptations to every rule .....One has to know which ones need to be broken and when the rules needs to be broken.

Thanks for this. What flour did you use for this?
@WalterTruppTheChefsTable4 ай бұрын
I use 00 flour but any plain white flour works Rice flour makes the most crisp version but struggles to hold on ( if it is not superfine) Good luck

I often have whitebait at a resturant. If it comes up crispy back it goes. cooking time is 1 to 2 minutes depending on size. IMO

Hey no you don’t need to change anything just cook it till the oil start to slow down in terms of bubbling. Basically as less the oil boils the mess liquid inside the fish which means it’s cooked through Hope that helps 😊

All right, two things about this video. 1st- this dish is unfamiliar to me so I don't know what to expect. That's not necessarily a bad thing. But I need some context. So where is this dish popular and what are these tiny little fish? What would it be good to serve with? Honestly I'm clueless here. Now #2- very well shot and the editing kept things moving, just like they mentioned in the homesteading channel about the 10 second rule. Another thing that would make this even better is some people actually being there watching you while you're doing this. Capture their expressions as you explain what you're doing. It gives your veiwers a sense of being there also. Of participating. I have noticed most KZbin videos seem better if there are more then one person there,even if they are there as audience. Did you notice the veiwers response to this video? I sure did, you received some great veiwers comments, this is great. Use this video as a good template for doing more videos. I'm curious, it looks like you were doing multiple cameras work in this video. More than one camera filming at one time. And someone was moving the camera at times keeping things interesting for the veiwers, well done. I'm aware shooting like this creates more work in the editing process but it makes better content that ultimately gets more and longer veiwers veiw time. I'd go on a bit more however my cat has informed me I haven't spent enough time focusing on him. Our pets do a great job of making us realize that it's good to remember the past and plan for the future. But most importantly LIVE in the NOW. Because for our pets there is only the NOW, nothing else. And in this crazy world that's a great thing. So kiss your wife,hug your kids, play and pet your dog. And lastly stop and smell the Roses 🌹. Have a great day Sir. 🌤👍😃

Excellent lesson, great video. I hope my whitebait turns out the way yours did. I'll be sure to cook the shit out of it. Is it possible to overcook it?
@WalterTruppTheChefsTable3 жыл бұрын
Hey Thanks for your comment No you can not really overcook it like other fish Rather undercooking is an issue where they stay soggy As longer you fry them as crispier they are Good luck 😉

Hey Sorry to hear Tips Make sure they are not too wet - dry them Let them sit in the flour for a few minutes before deep frying You need to have plenty of deep frying oil and it needs to be very hot 170 degrees Celsius Dint deep fry to many at a time and if you fry a big batch fry it in small batches Hope that helps😉
