How to Cook with Birch Syrup: Recipes and Uses

A quick walkthrough of how I use birch syrup in the kitchen.
Birch syrup has a very different flavor than maple syrup. You can use it as a substitute for maple syrup, aged balsamic, or both mixed together.
In the video I go over a few simple ways I serve it, and walk you through an easy salad, and a more involved glazing process for braised meat that'll change your game.

I'm from Alaska and I'm so happy to see new ideas for the syrup I grew up with. We make caramels, toffee, and of course cover our famous sourdough pancakes with it. I have had an excellent sausage made with caribou and birch syrup right in the grind - sausage makers should give it a try.

How can I get into foraging? All I’ve found around my area are beach plums, wild strawberries and blueberries. Not that they aren’t great! I’d just love to enjoy more of the nature around me

The easiest, fastest way is to find other foragers in your area and learn from them or take classes.

How would the glaze pair with Venison??

As good, if not better. Slow cook a deboned venison shoulder or neck, chill, cut into rectangles or whatever size, and do the same thing.
