Overcooked...no nutritions left, just flavors and a little bit of fibers. Raw or minimum time hitting is the best. We should think keeping as much Nature's nutritions as possible before cooking! Mother Nature gives us the best way to consume minimal and get most from what we consume. But meat and fish have to be well cooked because of possibility of parasites and other harmful micro creatures. Just my thinking. All the best.

I love watching your videos, but this time I to say how disappointed I am with this dish which you call it Italian. Honestly is nothing Italian here apart from the courgettes which Italian name is Zucchini and the olive oil which you can find plenty of in Greece, Spain, Portugal and so. Basically is a saute of courgettes. I'm not gonna give up on you because of this but please don't call it Italian. All the best!!!

....no worries and thanks for your feedback.....my mother (and father) are both Italian, born and raised in Italy and this is how my mother cooked Zucchini, thus, the reference to Italian. Anyhow, regardless, I hope you give it a try and thanks again for taking time to write 👍

@CookingwiththeCoias I have no doubt of your Italian roots. I may suggest how to improve your dish to a much more Italian taste, with your permission of course. Crush 2 garlic cloves and add them to your olive oil before is getting really hot together with some fresh thyme brunches, then remove them when oil is hot. Add your diced onions together with few finely sliced chilli rings without seeds ( only need about 5-6 rings ). Cut the courgette in half on long and with a spoon try to take out as much core and seeds as you can ( this will prevent the courgette to get softly or mushy and will be much firmer and close to al dente texture ). Freshly cracked pepper and sea salt flakes to season. Finish with fresh lemon juice and freshly chopped parsley. You try it and let me know how it was and more important, if is closer to the Southern Italian taste. I wish you all the best!!!
