Yes. When you create a cluster Launch config/template, ASG, VPC everything will get created and nodes will be under this!

Sure, will make. Here are few tips. You need to check-out deprecated api versions for the new version cluster. First upgrade api versions, then upgrade the cluster control plane. Take some back-up. Use Blue-green deployment to upgrade your cluster on self managed nodes. Only small incremental version you have to do.
