Interesting workflow. I always create the low poly model first, do the UV mapping and apply the color ID map to that one. Then I duplicate it, apply the default Maya lambert shader, create the high poly model, export low and high poly .fbx files for texturing. There is a lot less to worry about with making sure both models are the same scale and in the same location.

Why are you creating a high-low poly mesh and on top of it making a low-poly mesh? Could someone explain to me why he is doing that? By the way great channel! Love your content! You have my subscription!

Sorry, I don't know how I missed your comment. I created the both high poly and low poly mesh so that I can bake the details of high poly on the surface of low poly mesh without increasing the polygon count. And it's important for both meshes to be on the same position at the grid so that there are not issues with baking.
