I just start buying whole chickens in the past year from a local farmer since meat prices have gotten so high. Is that bit of extra meat you pull off with the thigh what is referred to as the "oysters"? That looks a lot easier than trying to trace around the muscle line with your knife. I'm sure you know to save the discarded parts to make chicken bone broth or stock later on! So easy and so much richer and more flavorful than anything you can buy at the store.

Thighs and legs are my favorite part of the chicken. When I smoke a whole chicken I always spatchcock it so it cooks evenly. Great video as always! Btw I want a chicken gun now.

Yes, the dark meat is also my favorite. Unless we’re going out for wings. Wings done right are really good too. Haha chicken gun!! I couldn’t believe they really had such a thing.

Jay Bates I use video glasses. IVUE is the brand name. I wear them while I’m cutting to capture the first person view.
