I don't know if you will see this because I see it's been years since you have been back here. I just wanted to say that I have been doing this for a number of years and it was interesting for me to see that you do exactly what I do. I always use two Turkey legs and I put bread stuffing between them and tie them up. It makes the absolute best Thanksgiving Turkey ! But I don't only do it at Thanksgiving.

I never thought about deboning a turkey leg but I do cut up the hole turkey since it's just me . I also save the breast bone for stock for dumplings because there's still meat on it and it makes the best dumplings better than chicken . I also save the broth after I pressure cook it stick it in the fridge to cool after fat gets hard I pop it off and toss it . I freeze the broth for dumplings or gravy later .

Yep, me too. And the dark meat is my favorite. This approach lets you enjoy all the dark meat without having to navigate those awful feather bones. Glad you enjoyed the video!

I never knew they were called feather bones but that’s always the worst part of the turkey leg. I’m thinking it might still be easier to cook them whole and pull the meat off. We prefer dark meat so I always roast extra turkey thighs. Very informative.

Been there, done that. I found that not only is picking out all those feather bones time consuming, but it also mangles and removes some meat. A better strategy is to break the drumstick bone at the ankle then debone leaving the ankle intact. Stuff, tie, and roast it then pull out those feather bones before serving. They slide out clean and easy after it has been cooked. Leaving the ankle on also closes up the end.

Aren't those technically tendons, not feather bones?

This video is sped up. Even for an experienced chef, (or cook), removing the Turkey Leg tendons, (called herein as Feather Bones), is a time consuming process. It can take as long as an hour per leg. But the final product is worth it!

It’s easier to pick them out after it is cooked. They slide out clean and easy without wasting any meat.

I Love turkey leg since here in germany, it is probably some of the cheapest meats you can buy and I am currently trying to get away from pork as much as possible (not for religious reason though). But these goddamn feather bones are the bane of my existence.
