Daz, 1) I NEVER thought about dehydrating pickled jalapeños!!! My mind is blown!!! Seriously!!! 2) I never thought about using baking paper with my Food Saver bags and I’ve been using it for about 15 years!!! I learned something new!!! 3) Wow!!!! That recipe sounds so good!!!

I don’t want to run the machine indoors just in case the jalapeños get into the air. Hubby is sensitive to it. But honestly I’m gonna try it. I’m still thinking about it!!!

I had to come back again just to say thanks. I watched this the other day after you posted it. Today I found myself trying to make something for the super bowl with what I had on hand. This video inspired me. I did not record it but it was good. My husband won't eat onions. It was just linguica chopped small, cream cheese, garlic, salt, pepper and a table spoon of bread crumbs. I halved my peppers, lightly salt and peppered them, laid a small piece of cheese at the bottom, filled peppers with the mixture, baked it for 15 minutes, topped it with a small amount of cheese and baked it five more minutes. They came out great. Thanks for the idea. I normally do them with a garlic cheese filling and wrapped in bacon. EDIT: I posted it on the wrong but you know what I mean LOL.

I will have to grow more jalapeños. This year, I used all of mine in salsa, and felt I almost didn't have enough for that! Maybe I just like chilies. Lots of chilies! I actually did a lot more dehydrating this year than I ever have before. I bought a vacuum sealer, and I really enjoyed packaging my dehydrated veggies in vacuum sealed jars and plastic bags.

Daz! This was a great idea. I think I’m Gonna freeze dry some and try the powder. That’s a handy idea for the O2 absorbers also…we need to get that attachment for our vac sealer

G'day. I do not know of an officially recommended time frame for storage. From my own experience, I store mine in a glass jar and vacuum seal it at the start and every time I open it. I run out in 6 months and the powder is fine at that time. I also store them in a cool and dark space. Rather than opening the one jar all the time, I split in in to 2 if it's a larger batch and that way, the second jar remains vacuum sealed for as long as possible. G'day Sean. Definitely look into things like hanging hot peppers to dry. Can't see why you couldn't. Before I had the machine, I dried my Thai chilis by having them lay in a single layer in a cardboard box at the back of a room here and they were fine. Took a while, butt hey were perfect. These things obviously work quicker, but I'm not off grid either. All the best to the both of you. Daz.

I grow a variety of chillies and I don't know why. I do not have a dehydrator, I've seen some just soaking them in olive oil. Any other easier way to preserve them Daz?

G'day mate. You can air dry them and that is what i used to do with my fresh ones before the dehydrator. You can string them up and hang them and you can use your oven on a very low setting too. Freezing them is an option too. I had a mate from the Philippines and another from India who grew lots of stuff and I had so many chilies given to me, that I would freeze them in bags. G'day. Hah, hah.... I lived in Malaysia for 4 years while my father was sent there in the air force and we quickly grew a love of hot food and that continued on as I became a chef. I do understand it's not for everyone though and I often make 2 versions of a meal there for the family. Oh and being busy and not keeping up. I like the ideas but much of this sounds like over kill. We dehydrate and store in a jar. And have for years with absolutely no problems at all. I think your process is good, just in my experience it is not needed? Blessings

G'day guys. Thanks for the feedback. I do it to ensure that the food keeps as long as possible and as I have the resources, I put them to use. I'm storing food for 8 people long term here and I'm not taking chances personally. I get what you are saying though and I do agree that they should be fine, but if I can do the extra steps and at such minimal cost, it's how I roll. 👍 Thanks guys and I hope you are well. Daz.
