Hi again, Bob, I have made several “variations on a theme” based upon your dehydrator cookie recipes. Most recently, I juiced several pounds of organic sweet potatoes (plus some organic apples, carrots, and a pineapple). I made a slurry of ground flax seeds, chia seeds, cinnamon powder, and the juice. Once that had thickened, I mixed it into the pulp, along with organic sunflower and pumpkin seeds. I spread this “goop” onto the dehydrator sheets. Once the sheets are dry, I break them into random serving sizes. I think the inclusion of the organic sweet potatoes is our favorite version to date. Since you are motivated to regularly include organic sweet potatoes in your diet, I encourage you to try this addition to your dehydrator cookie recipes. Thanks for posting your original cookie recipes, which were the inspiration for my organic sweet potato cookie/cracker.

Sounds like you are on track to become a centenarian. Keep in mind that 67% of the diet in the Okinawa Centenarian Study is comprised of organic sweet potatoes. Approximately half of my diet is exactly that! Thanks for sharing all your info!

Another wonderful video, Bob and Teresa! I love the idea of getting a dehydrator on Craigslist. I set up a search for one after I watched your video. I have a smaller one with five trays that I can start with for now. Your potatoes are beautiful! I am heading to the store tomorrow to get some to bake and some to dehydrate.

Hello Bob! I too am a cellist with an avid appreciation for dehydrating foods due to the shelf life! I found a hack completely by accident, have you considered placing rice in a tea ball and placing that in with your dehydrated fruits and veggies wheen storing in jars? The idea occurred to me when I was touring and visited hotter climates like Florida and Barbados - and saw that restaurants had mixed rice in with their salt. Apparently it has miraculous moisture-absorbing qualities. I tried it with my multitude of jars in my dry foods pantry and Eureka! Now my dried foods stay crispy and crackly for quite a long time! :)

Bob !! Love this video and will be making these soon! We have a 9 tray Excalibur dehydrator and have made sweet potato treats for our doggie...but not quite this same way. FYI: I have become a Raw Organic foodie! The beauty of the dehydrator is that you can cook food below 112-118 degrees so you don't lose the nutrition, enzymes, vitamins and minerals. You lose the vital nutrients baking over 118 degrees first. Try just slicing and placing in the dehydrator. You can make chips! and keep ALL the nutrients intact!!! Thank You for your video.

If you dehydrate them raw, it's a good way to break a tooth. I would partially bake them first, slice and then dehydrate.

I tried dehydrating raw sweet potato slices, but it has the consistency of rocks and it's a great way to crack a tooth. Baking before dehydrating definitely takes the edge off. My obsession with organic sweet potatoes stems from the Okinawa Centenarian Study - it was about 67% of the diet. Not only did the subjects live past 100, they didn't have our common ailments and diseases.
