iTunes is outdated. They changed iTunes into Apple Music, iCloud, apple devices etc into separate apps all in Microsoft store. You should now use apple devices to restore. Just like this video hold shift and hit restore to select version of iOS you downloaded. The new apps work a lot better and faster than iTunes
