I dry aged a steak at home for 34 days with a prime rib roast for the first time using the techniques in this video and it was absolutely perfect. Even better than a steakhouse. Then I made some side dishes inspired by your videos. It was a great night! Can't wait to do it again with family!

My family method of dry aging is the use of salt. I use a standard size wine fridge from Costco ($150). I replaced the glass shelves with wire racks ($14) and lined the side walls with salt blocks ($45). 2lbs of pink rock salt in a tray at the bottom ($16).

Guga, before I started watching your channel I would make steaks once in a while, and the only cut I new was ribeye, and sirloin. Now I have a 5 lbs ribeye in my fridge dry aging. My parents are quite sceptical (I'm 12 years old ), and they're kinda shocked I spent 100 bucks on the meat, but I hope this is gonna go well!!

That looks incredible! I've never seen that special dry aging bag before. If you do more dry aging in the future, please weigh the steaks before and after dry again, it would be interesting to know how much water weight the meat loses. I'm curious though, why do you always use garlic powder? I like it occasionally, especially to improve the flavor on cheaper cuts... I wouldn't put garlic powder on a dry aged steak and distract from its own flavor. But I also only know 1% as much about meat as Guga does!

I have an extra fridge in the garage. It is my beer fridge, (And extra freezer space) but sometimes I have to clear a shelf for the dry aging. I place the meat in a UMAi Dry bag, then place this on a rack that sits over a glass cake pan full of salt to absorb the moisture the meat loses. Of course, after the aging is done, it leaves an empty shelf in the beer fridge... a cardinal sin that must be made amends for immediately!

I HUMBLY suggest that you do an experiment between a PROPERLY AGED Steak (no bag, in temperature and HUMIDITY controlled environment), versus an Umai Bag aged steak. THAT would be a good experiment... Actually Crazy Dave did a test, but his aging fridge has NO HUMIDITY CONTROL and is way too low humidity for good aging (therefore his steaks are always too dried out), and even the Umai bags beat his aging fridge

hey guga! can you try dry aging with butter? the idea is to use a large layer of butter so you wont have to trim any valuable pieces of the rib eye. In theory it's less work, higher yield, and you can dry age for longer.

I read more into it and many people are saying it's a gimmick (Im inclined to agree). It actually hinders the dry age process. Love what you're doing! Side suggestion, and forgive me if you've already tried this and didn't care for it but it's a method of searing that I am all in on post sous vide after many "failed" experiments. Rather than transferring coals from the chimney, I leave the coals in the chimney and sear things on a grate directly on top of the chimney. It's my default method for searing nowadays. Thanks for your work, inspirational to the core!

From where I come, we do dry age meat in smoke and we keep it in that room for months. It is actually what other people call "bacon/ham" ;) Now try dry age Wagyu A5 for 45 days and make it Guga.. ;)

Love the video Guga......A couple weeks ago, I bought a used refrigerator. Then, at holiday time, I bought a whole Angus prime rib, around 22.5 lbs. Then, while at Costco, I saw they had prime grade New York strip loins for $6.99/lb. (18 lbs.) I had to buy one of them also. I am now just over a week in with both of them in Umai bags. Gonna go just beyond 45 days and I cannot wait. Thanks.

Taste and the tenderness is out of this world when you age beef like he's shown. It is letting the meat breakdown on a molecular level so it changes it cellular structure. The meat is technically slow rotting in a super controlled environment in the cold fridge. Huge (and small) meat processing plants will do the same thing but out in the open air of a large meat freezer. After the aging process ends they will cut away all the putrefied outer parts and butcher the best of the inside of the hanging carcase. That's why when you go to the butcher and ask for aged beef like that, it will be way more expensive....but also way worth it too. Tender and tasty! Weired but true, fresh cut meat just isn't as good. When you have an aged steak (not all are) at a roadhouse grill you'll know what to expect more. $$$$$

Zuul depends on who you ask and where you get it. But generally they aren’t cheap for the average consumer.

Umai bags are 3 for $22 that he uses. You don't need a vacuum sealer. Umai has another method you can use. Go do a google search.

Watched this video a long time ago but just got in my 11.04lb sterling silver strip loin from Grand Western steaks (also got TWO DISCOUNTS!!! 😎) delivered today, thawing in the fridge enough to cut it in half and dry age one half and just rebag/vacuum seal & freeze other half and do side by side comparison with a friend that went in halfway on the purchase lol, super excited, never had dry age before
