Hi LeeAnn, I've hadn't noticed anyone else saying to prop the lid & wait, to help with the cooling off process. I bought a Presto pressure canner, but haven't used it yet. I have water bathed, but never pressure canned - which might explain why so much of my mom's stuff had to be tossed, especially her green beans. Have a great day.

That idea of placing a cooking sheet under the cutting board is AWESOME! I usually lay a kitchen towel under but then you have that towel to wash cause you don’t want to use it and risk spreading those yucky germs. Looking forward to pressure canning my first meats. I have canned a bunch of chicken in the recent past and have more to go. I love the easy meals I can make with it already being canned up!

THANK YOU - I am so glad you said you don't add salt at the start - when doing fruit I don't add sugar - salt / sugar is not needed unless it is part of the recipe (like making jam you got to have the sugar) people are so use to adding gobs of sugar and salt when it is not needed and if you read the "fine print" from the website or ball blue book you find it

It’s so good that way… I use to boil it but that was a mess… baking it in the oven is the way to go before canning it. This is my go to way!
