Can I connect a pap2t in my company and in the branch put another pap2t to have 2 extensions of my analog telephone switch?

You would need one with FXO ports and another with FXS ports to be able to "extend" your analogue PBX extensions to somewhere else. But that's an awful workaround, it will be unreliable and poor audio quality. Move your entire phone system to VoIP! :)

Have you got a set up guide? Is the phone mandatory to set it up? Im just getting green flashing with an ethernet cable plugged in only and router is not showing an IP address.

It should still get an IP on your LAN and be accessible on the web interface without a telephone plugged into it.

I have the adapter but I have 2 issues. First the power light is red. Secondly, my phone keeps saying cord not connected properly

Try a different power supply? Make sure it's the same voltage! And the same or higher amps/mA than the genuine power supply. If that doesn't help it sounds like you've got a faulty one
