The new wolf variants will be coming in the sub-update for 1.20 which is the 1.20.5. It will be released early as 1.21 will be on May or June.

I have a tamed wolf that keeps turning red and sinister whenever a sheep gets near. I have to keep him tied up so he doesn't kill the villager sheep. Anyone know why this happens?
