Freeze the zucchini juice into ice cubes and add it as a broth to soups and stews. It’s really good in soups and chili where the liquid cooks down or is just hidden and you get the same nutritional benefit as the rest of the zucchini. Also try a zucchini, ginger and lemon shot!! Good for the immune system

I like to use juices from veggies to cook rice with instead of plain water. I just measure it, put it in a ziplock, get out as much air as possible and freeze it flat.

Mix the juice in with your smoothies. Freeze the juice in cubes, throw in bag & freeze. Drop a few cubes in each time.

I do this, but I will put the 2 cups of zucchini in Food Saver (vacuum seal bags, squeezed flat, leaving room to seal the AFTER they are frozen. This way there in no moisture to interfere with the sealing of the bag. And it keeps for a long time.

@@TheCrunchyGinger I prepped and froze about 10 pounds of shredded zucchini today and 12 pounds of sliced zucchini and yellow & crookneck squash. Funny thing is I don't eat it. I grow it and prep it for my wife. She loves making it into casseroles. The shredded zucchini is for zucchini bread which I do like. I will also can it in wide mouth pint jars. it will store for quite some time like that.
