How do you spell "vellene" I'm trying to buy the woven water soluble stabilizer and having trouble finding it. I found one called h2o eau gone, will that one work?

Yes, H2O eau gone works great. And it's spelled " Vilene "

Can you hoop 2 layers of the wss to help with the dense stitching?

absolutely! But you STILL want to use the woven type WSS and NOT the plastic sheeting type for stability reasons
