There are plenty of tile scrolling platformer tutorials on youtube, maybe try starting with one of those to create your player. You can also check out my Scratch account where I have a completed paper Minecraft game with a player, breaking, placing, and a lot more.

Mostly I learned by experimenting, but also Griffpatch's tutorials were very helpful for me in learning Scratch, especially for the tile scrolling engine etc.
