So don’t get me wrong but after this event you can’t get shiny meltan from the boxes after this event? This is even if you can still open up those boxes and get those spawns?

Correct, it was one of the shinies that they turn off and on for events. So it’s only shiny during this event then they will turn it off until the next event they want it to be shiny.
