And if you add food dye to the solution, you get lightly coloured crystals. Colour intensity depends on the amount of food dye you add. (add more for deeper colour) I like to use purple food dye (mix red and blue if you don't have purple) to get a nice Amethyst like crystal.

Get a colored compound, don't fake it out with cheesy dye. Just ruins the natural beauty. Use light if you want to color a colorless compound.

The crystals are extremely fragile and should be handled with care. Don't even drop it or it will shatter into many pieces which will be hard to clean up.

is there a difference between ammonium dihydrogen phosphate and ammonium hydrogen phosphate? I'm not sure where to buy ADP from but I've found ammonium hydrogen phosphate I can order. I'm trying to grow crystals from home for an art project

It's also known as Monoamonium Phosphate (MAP) and is for fertilizing plants, available at garden centers or online

You probably could but it would be as easy to just use different chemicals, look up crystal growing and you can find plenty of other chemicals for different colour crystals, e.g. copper 2 sulfate gives a blue colour, Potassium Ferricyanide gives a red, chromium potassium sulfate gives a purple, do a web search for grow crystals along with your choice of colour, e.g. "grow black crystals" or "grow green crystals" and you should be able to find the chemicals you need. if you wanted to grow a multi coloured crystal use this method then put it in a different colour chemical for a few days to get another colour, or grow various colour crystals then put them in a clear chemical to seal them together, finally varnishing the finished crystal to preserve it.

The seeds are not melting, the crystals are continuing their structure off of the seed. If your seed melts then you have nothing for the crystals to grow on and they will likely just form along the edges of the container. Not sure what part of the process is messing up but if the solution is hot, wait until it cools before adding your seed crystal.
