Professional growers never snap the stems when harvesting, they simply pick the leaves off. Removing the stem slows down the regrowth if you remove the top fresh leaves new ones will grow in their place much quicker.

Three leaves are quite mature, what kind of tea those leaves will be processed for?

I found a large leaf tea plant which says the leaves are 3 to 5 inches long. Perhaps he has that same variety. It is Camellia siinensis.
