Again, amazing post! What i am wondering is.. since you live there (i presume) why not pick what you eat daily? Wouldnt you be eating old lettuce at the end of the week?

I'm so glad the person below asked that question because I was wondering same thing. Do you pretty much just eat salads all the time? Maybe stir fry to mix it up? Your diets must be perfection! I think I need to work a little harder at eating all of my harvests!

Yes, we don't want anything to go to waste! We eat a lot of greens/quinoa/beans "salad bowls" for lunch, and every night for dinner we make a giant cast iron wok full of sauteed seasonal veggies and greens to have as the main bulk or whatever else we are eating them with - eggs and homemade sourdough or organic corn tortilla, curry lentils, brown rice, a veggie patty, sweet potatoes, etc. Also a lot of homemade soups full seasonal veggies - another great way to use them up 😁

Could you maybe do a video about preserving what you aren't able to eat? Freezing, cooking or storing?

We usually only harvest what we can eat in a week. What you saw at the end of the video, we'd eat in about 5 days. But when we need to pull plants at the end of their life, or ever have too much at once, we like to make kraut! Bok choy, mustard greens, kale, etc make excellent kraut - not just cabbage! 👍🏼 also, add them to big ole batches of soup to freeze. Good question! Maybe I'll add a note to that extent in the blogpost 💚
