This video does not cover types of leather at all, or the methods of processing them for clothing. A motorcycle jacket is full or top grain (depending on the thickness of the hide) cowhide, drum dyed (as opposed the the colour sprayed on the surface). Various treatments are used to protect the leather without making it flammable.
