Im nervous to do this because we don't know what the DEVS have planned when the game is fully open ... Im scared that doing this will screw something up in the future.. much like time traveling does now

I don’t believe this will mess anything up because it’s just an item limit mod. As it is, your valley can go over the limit anyway with dropped sticks and flowers. Just remove the mod when there’s an update :)

You will not need to get Nexus premium to download mods. The premium is just to increase download speed and lets you automatically download mods. You are still able to access all mods for any game on the cite with free access. I've used it for years for free before purchasing premium :)

Does this corrupt the save when the game is updated and the mod doesn't work? Or do the items just stay you just can't put anything more down?

A pirated copy can not connect to the internet, so can NOT connect to the cloud. Sorry 😞

It is safe! Once the game updates just wait till the mods are updated & you can play without it. The game naturally lets you go over the item limit with sticks and flowers.
