So I noticed there are options for OM and CM data marts. Can the entire system center suit leverage the same Data warehouse then? Or would I need to build a separate Data Warehouse if I were to deploy an Operations Manager?

those db are for save information from Service Manager conectors for SCOM and SCCM (CMDB), if you don't install them, you cannot deploy them later, and you cannot have two DW registered on management server, just one... thou, information from these connectors is written in DWDataMart database, when OMDWDataMart and CMDWDataMart are not deployed
