Speed wise I would say start as slow as you can go while allowing the wake to stay formed with no white wash, typically 18-21 mph. Rope length also varies boat to boat but starting a shorter rope length, 50-65 feet allows you to hit the wake where it's a bit more narrow, then you can work your way out to longer rope lengths.
