An additional remark on cleaning knives: Make sure not to use the abrasive side of a sponge. They contain additives like titanium oxide that will scratch and dull the knife. This applies to all knives.

Just so people really understand, I julienned a handful of carrots with a new petty in shirogami #1 and I went to rinse it as soon as I was finished...too late. already tinted yellow on one side. 😆 If you don't like patina buy stainless. I personally like it plus the properties of high carbon.

Well, carbon is the element of life forms, a carbon knife is alive and will react with your food, but only rust is a bad thing, developing a patina just shows there is a living soul in your knife

@@themindset3329 that's not how this works, that's not how any of this works 😅😂. Steel is unstable, and oxigen believe it or not, is quite reactive, (that's why It is a good comburent) so steel will react with oxigen and get Oxidized acquiring yellow to orange tone.... Wierdly enough, Carbon steel has less carbon than Cast Iron.

You can use food grade mineral oil or you can also use spray cooking oil, just a quick spray before storing, but the cooking spray doesn't last long so it's perfect for stuff you always use and clean amd repeat the process, you canalso use vegetable oils

@@bw7112you need to form a patina. Without which the blade will rust easily. First remove all traces of rust, search online perhaps using baking soda. Next step is to build a patina, cut a bunch of cooked chicken or slice a bag of onions. Keep your knive dry when cutting as much as possible but still continue to chop. You will form a first layer of patina. You may see some rust water but keep drying your knife and go on chopping. Then continue to use your knife as usual cleaning and wipe dry. Eventually patina layer will grow and you will get a less rusty knife

@@skyboy123454321 Hi thanks for comment. At that evening, I went for shopping and bought coffee beans (unfresh, idk how to say). Then applied 24h of coffee patina. Worked like a charm. However, I think during removing the rust, I messed up with the shaprness of the knife. I sharpened it later on my own, but of course it is nothing like now as it was when it arrived. Cheers 🙂

A bit late, but leather soaks in moisture. So it rusts the blade faster. Oil your blade, wrap it in plastic if youre storing it for a long time.

Meat won't rust a knife easily, but I would wipe it before you're done cooking. Acidic foods like onions can rust your knife in under a minute!

Ive used carbon knives in the kitchen for 20 years. I never think about rust. All knives get washed and dried after use. If you are a fisherman, use stainless. But for the kitchen, its carbon or get out.

You can definitely use cooking oil, but it will eventually go rancid, which is why I prefer blade oil.

Here's the deal...ALL knives are rust proof! Here's what you have to do. USE, WASH, DRY and STORE! That's it! If people took care of their knives, there would be ZERO issues. I especially love those think-tankers who go to their knives website and leave bad reviews on how the knife rusts when their lazy asses throw this knife that they spent $150 bucks on, in a sink full of water and don't wash dishes for three days! take care of your shit and your shit will take care of you!

Stainless steel knives may be harder to sharpen but are more rust resistant and yes they do hold edges longer

@@elpee4197stainless steel is harder so yes they hold an edge longer depending on the grade of the steel, but carbon steel can hold a much finer sharper razor edge than stainless steel, and is easier to sharpen
