Would it be better to leave the G40 on overnight to maintain that temperature? Also does brewing a sour risk future brews in that particular piece if equipment?

Regarding the first question, this is directly from William: "Dealers choice. If I remember it did drop a to the low end of the temp range so I briefly heated it back up in the morning. Setting it to run overnight will help make sure the lacto stays nice and happy, during colder month like now, and should help get the wort soured more quickly which is ideal." Regarding your second question: the beauty of the kettle sour method is that you create the lacto tartness up front and then boil the wort which pretty much sanitizes a lot of the equipment involved as that tartness is "locked in" the wort. That being said, you definitely want to run a thorough cleaning/sanitizing cycle on your all of your equipment. If you are concerned, just to be safe, glass and stainless are easy to clean and sanitize and make sure there is not contamination -- and then just have a seperate set of plastic pieces (air locks, beer thief, etc.) denoted for sour beers. But by and large this is not an issue specifically with kettle souring. Hope all of this helps!

*** BUYER BEWARE *** If your G40/S40 craps out, like my G40 did on it's 6th brew, GF WILL NOT REPLACE YOUR FAULTY UNIT UNDER WARRANTY!!!!!! Don't buy into this hype, this company doesn't give a crap about you as a consumer. They are currently trying to fix it while it sits on my kitchen floor... not sure osmosis is what's required here... *** BUYER BEWARE ***
