I've been baking before these baking strips became so popular. Living overseas, a Belgium older lady told me in her best English to rip towels the size of my pans. Saturate them, squeeze the excess water out then wrap around the outside of my baking pans then pin them together. I did exactly what she instructed me to do on 2 10" pans. I had a layers that were perfect with no dome and no hard sides. That was over 40 years ago. So I know my damp strips of old towels worked as well as the Wilton Cake strips which were not available where we were stationed at NATO headquarters. Just a story to share. I probably would have purchased those Wilton Strips back then but I still use my old terry cloth strips these days for Birthday, Anniversary and even wedding cakes.

I forgot to add to "cut the Terry cloth the size of your sides of pans" you will bake in. No they do not catch fire or burn. They simply dry out.

Preppy Kitchen on KZbin shows how to make an at home version if you are short on towels... He instructs to fold up paper towels into the length of your pans, soak them in water, and wrap them in foil so they are long and flat and resemble the long rectangular shape of these cake strips. It is basically "free" (since most of us already have these two items in our homes). I recommend watching his video because he shows three different cakes for comparison - one with no strips, one with wilton strips, and one with his at home strips, and the two with the strips look almost similar. I assume if you are a constant baker it might be more convenient to just own some wilton cake strips but if you are just trying it out the make shift one should do.

When taking cake classes many years ago, my instructor taught us this, mix Crisco with flour to make a paste, grease pans and when the cake comes out, no chalky residue, you can save this mixture for several weeks in the refrigerator. I bake at 325° it takes longer and raises higher. I test with a knife in the center, if it comes out clean, it's done. Takes a little over an hour. I fill cake pans, white or yellow, box mix, Pillsbury, 2/3 full, chocolate 1/2 full. I mix cakes until they resemble meringue, I cut back on water a little and use jumbo eggs. After baking, I wait 15 minutes in the pan and use a chef's knife to level in the pan. I flip them out on a cookie sheet with parchment and into the freezer for several hours till frozen. I used to do cakes for people, my health no longer allows me to do them. Every now and then I want to bake a cake and decorate it. My husband and son would get cake scraps and left over frosting. Don't forget popcorn salt in the frosting, it kills the frosting being overly sweet, doesn't take much, eliminates pits in the frosting as it drys. Check the labels on the salt, no cheese flavor🤢🤭👍 Thank you for this video. I used to order supplies from Wilton at the store where I worked, almost all products from Wilton and set classes up. We rented cake pans too. The store has now closed and no one rents pans anymore here. Now I have four grandkids to bake for. 😊😊😊

I also bake at a lower temperature. It adds only a few minutes to the baking time and produces super moist layers with no domes or dark crust. I learned this trick many years ago before cake strips were invented. This also works really well with pound cakes and makes them rise a lot higher. I used to work for "Let Them Eat Cake" back when Greg Duda still owned the company. Vince Naccarato bought the company and many of use were let go. Wilton Cake Enterprises endured but they eventually closed all the Let Them Eat Cake stores and its commissary. I also don't bake nearly as much as I used to but still enjoy doing so for friends and family mainly for the holidays.

You can also place a shallow pan with water in it in the lower oven shelf while your are preheating your oven and get the same effect. Make sure you have enough water in the pan so it does not totally evaporate during the baking process. When using the strips, if you have a shorter baking time, use caution of the water content and a fabric hot pad.

No, the KitchenAid is a little faster at incorporating ingredients, I use vintage two beater mixers all the time and make no adjustments when making cakes. Just use a spatula, scraping the sides & bottom of the bowl and beaters, to make sure all the ingredients are well mixed together.

Everyone keeps saying to use the cornstarch all purpose flour thing to substitute cake flour, let me tell IT DOESNT WORK! I speak from experience, I always have cake flour on hand because I use it in my sponge cakes and white cakes, one time I ran low so I thought I'd use this method and let me tell you, it messed up my whole cake. The cake was more or less fine, like it was edible and the crumb and whatnot was okay, and it tasted great too, but it also had this sort of gummy texture, that not only made it hard to slice into, but also reminded me of slicing into firm jello or something. If you really want to use cake flour, go buy some, other plain all purpose flour works JUST FINE!

works for me EVERY time! make sure you remove 2 level tbsp flour per cup of APF and replace with 2 level tbsp corn starch and sift the whole batch about 5 times before measuring for your recipe. Hope this gives you the same success :0)

If you don't have cake flour, you can also just use plain flour and omit one tablespoon of flour for every cup of flour called for, but don't replace it with corn starch or anything else. And be sure to sift it as the recipe instructs.

Just ot remember to check tempreture is right in the oven. no matter what you use. Any pan and gadget won't bake right. Just like a photographer, who may have all the fancy equipment. But if photographer have cateracts or whatever, then all the fancy equipment won't do any good.

Most likely you baked the cake too long, as soon as the cake shrinks away from the sides of the pan and the middle of the cake is firm and bounces back when lightly touched, it is done. One must use "large eggs" in making the recipe and the flour is measured after sifting. Try adding a tablespoon of cooking oil to the butter when creaming too. All that I describe make a difference to have a successful cake.

Measure out the all purpose flour and take out 2 T. and replace it with 2 T. cornstarch - and although backwards from most recipes for years and years of cooking, then sift. The instructor indicates to measure then sift. Normally most recipes (in any tenured cookbook or professional course) will indicate # of cups of 'sifted' flour...guess that is younger people putting their own spin on baking. Not exactly a science by weight or volume.
