Brad, Hubby & I grew up in northern NJ in the 50's. The little Italian "fast food" place we sometimes went for lunch filled their calzones with a little diced ham, the three cheeses, a pinch of oregano and a sprinkle of olive oil. Delish! Thanks for the trip down memory lane!

The last time I tried a calzone, a LONG time ago, I failed miserably on the form. Love Christa's sealing technique. I'll have to give that a try. And it is nice polish. :)

Hi, brad & christa. I love watching your cooking video, make me laugh, especially brad. I'm from Malaysia & here we called this "karipap" and we eat karipap for breakfast or evening tea. The size of karipap is smaller and fry in oil. In Malaysia karipap is selling at street. Here, we use karipap mould to prepare. The choice of filling are beef minced, chicken, potato & sweet potato. Hello 👋 Brad and Christa! How are you guys doing this fine day?! Thank you for being so warm and welcoming to your home showing us how to cook a lovely calzone. So a little bit about myself I come from a multicultural background and family. I love Itailain and Mexican food! My son loves 🍕. I guess that's because when I was pregnant with him that's all I ever wanted! Pregnant cravings I guess you'd call it. So any way I've learned how to make empanadas. It's a Mexican dish. You can make it how ever. Cooked chicken, beef, vegetables, and cheese can't forget the cheese, mozzarella cheese, and or Itialian Riccotta cheese. I then make my home made corn meal mix to make empanadas. I just use a tortilla press, then I put in what ever fillings I desire, I mostly use cooked chicken bell peppers and Itailian Riccotta cheese. Then I pretty much close it up in the same way Ms. Chirsta did. Sometimes I put flour in with the mix to give it a different taste. I either fry it or bake it either way it's really good! So here we go sorry this comment took so long! I really loved your recipe! So what I'm thinking about doing is putting a little spin on it. And see how it comes out. Instead of using flour I'm thinking to use Maseca it's a Mexican corn meal, and also add a little bit of flour to the mix. And then putting my fillings in the middle like how you guys showed me. Thanks alot for the recipe!! I'm thinking calzones and empanadas are in the same family. It be a Itailian - Mexican Calzone. Hey does that even sound right?!! God bless you both and all the family. I worked in a pizza place the summer after high school. Then when I got to college there was a build your own pizza area in the cafeteria so I would make calzones instead of regular pizza. Was so good!

In some areas ricotta can be more expensive, so in a pinch you can take small curd whole milk cottage cheese and using a clean piece of cotton fabric, or double layer cheese cloth, squeeze the moisture out. And since mozzarella cheese can be more expensive you can substitute Monterey Jack cheese. Also learned that when making pie dough where I use butter that having the bowl really cold, helps keep the cubed butter firm when I am cutting it into the flour. Makes for very flakey pie crust.

I'm surprised a pizza snob like you hasn't built a wood fire pizza oven yet. Building one is the thing I'm looking forward to the most when we finally get on the homestead. Not to mention all the other things you can do with those ovens, breads, muffins beer chicken and so on. Once heated up they stay hot for a long time. Plus they use only wood.

Ya this is kinda terrible. I wish I could make one for them so they knew. You aren't suppsed to end up with a gaping hole hotpocket. You need about 4 times the ricotta, mixed with salt and garlic, then toppings, it should honestly not be that easy to "close". You need vents. You also should throw a light oil or eggwash all over the seal and on the top. Ugh. Wrong, wrong.

para o recheio eu inventei a ideia de doce e salgado ,adicionando no recheio.O presunto 100 por cento gordo(aqui no Brasil chamamos de presunto royal) cortado em fatias bem finas ou que você possa desfia-lo cozinho 2 ovos por cada calzone e pico em pedacinho o ovo inteiro e figos (fruta) pois ao assar a pizza ela vai ficar com sabor agridoce. for the filling I invented the idea of sweet and salty, adding the recheio.O ham 100 percent fat (in Brazil called royal ham) cut into thin slices or you can fray it cook 2 eggs per calzone and piece peak in the whole egg and figs (fruit) as to bake the pizza she will be bittersweet.

Brad, that canned Parmesan cheese is preserved by adding wood pulp .. better to purchase Parmesan and grate your own from a wedge of cheese.. BTW Christa is a doll how did you get so lucky?

w live in iowa wanted to share maidrites which is a chain here brown lb hamb drain throw in dried onion two tsp and put in can chicken broth cook toll broth is gone serve on buns for your family you will have to double or triple these are loose meat sandwhiches leftovers we use in spaghetti enjoy
