Well not everyone in America drowns their pasta in sauce. I was taught how to make a very similar lasagna, except we used all purpose flour and added salt to the dough, by my 100% Irish American mom who never travelled beyond New England. It has béchamel with nutmeg, pasta sheets, ragu and Parmesan. It was never drowned in the ragu - made with tomatoes my parents canned from their garden. The major difference is my mom added whole milk ricotta to the Parmesan layer. It brings back good memories, thank you for that. I’ll have to make some for my family soon.

All I want to do is make pasta when I come home tonight from work and I have never in my life made homemade pasta. these videos are so mesmerizing and I love watching these grannies. reminds me of my great-granny. She used to cook for a group of priests and she made amazing food but she was German not Italian

This kind of knowledge is very much alive here in Italy. Newer generations still know how to make homemade pasta and they do it for special occasions. But this knowledge is somewhat local. Every region has their own kinds of pasta. I'm Italian and I've seen on this channel some types of pasta I didn't know before. Also it's nice to see these techniques documented and shared with foreign countries.

I bought your book and searched for Franca's video after seeing the recipe on page 154-155. I made this today and oh my! The absolute best lasagna I have ever made, and ever had! I live in a rural area of the US that does not have a lot of variety of quality restaurants, Italian or otherwise. I am enjoying learning to cook in this style from proper Italian ladies! This is exactly how my grandmother used to make them. In Emilia Romagna only Ragout, bechamel sauce and Parmesan cheese are used. Simple yet rich and delicious!

My husband and I made this recipe last night using the new cookbook. Oh. My. Goodness. This took hours to create (and admittedly we used a pasta crank instead of hand-rolling), but it was worth every bit of the effort to make it happen. Thinking in my late grandmother, she used to make us lasagna in Christmas eve dinner. Pasta, tomato paste, tomato sauce, Italian seasoning, garlic, whole cooked tomatoes, lean beef meat and pork(fatty), simmer till u see the bottom of the pan at scrape, cottage cheese, sour cream, and mozzarella, black olives, g. I have my mother to make us her dish, I'm lucky guy, I can make it to, she's here with us in a way. Tanks for sharing

meat disturbs me lately and I eat only chicken pork and beef small amounts. I cannot imagine horsemeat. I find that exremely upsetting more than the other meats. I love this channel and absolutely love the old wisdom of these eternally young women. I am Greek and cook similarly from scratch.

In order to avoid the pasta from getting soapy smell taste, towels use to dry pasta strips should be washed with ash as our grandmothers used to do. My mum makes 10 to 12 layers of thin pasta strips so it can host more ragú , white sauce, and 24 months aged Grana Padano cheese.

Hi Vicky! I don't know, actually. She's 76, she's able to make tagliatelle, tortellini, tortelloni, lasagne (green, mandatory), tagliatelle, agnolotti, rosette al forno, and probably some South Italy pasta, learned from her mother in law, for example "marcannali" which are triangular shaped big spaghetti (due to rolling pin special groves). What I know is that we always ate deliciously and healthy 'till she has prepared our meals. I love your channel. Good job!

I can't believe I believe some tasty cook saying bechamel wasn't traditional and you should use ricotta... Since I'm french, I thought we were the ones adding it to the dish. But it's obvious, this sauce is so perfect in it!

That's kinda how it goes with more rustic cooking like this: You'll have some exact measures for certain more "science" baking stuff but then, for the rest, it'll just kinda be going off of what looks "right".

Italians usually use concentrato di pomodoro to cook ragu di carne ma Franca ha aggiungiato passasto invece di concentrato. Is there any rule about this? Anybody know?

Hello Cihan, good question; I haven't come across any rule about it . Concentrate is an intense flavour used to round out the tomato sauce if needed and I don't recall it being used routinely in ragu I have filmed? As it's the commercial form of 'strattu from Sicily, it should appear in more southern Italian recipes? Perhaps others can help 😊 best wishes, Vicky

The amount of tomato varies greatly with taste from family to family. I myself rarely add any tomato to my ragù. I'd suggest one tablespoon of concentrato or two for 1 kg of meat (700 beef, 300 pork). When making lasagne, a ragù with passata is ok because it would dry in the oven.

Hi, I am from Emilia Romagna as well and to my knowledge, we use the passata, not the concentrato di pomodoro, as the granny was doing in the video. In other regions, especially going more north they use less and less tomato sauce for the ragu'.
