It's called peas because in Jamaica we call kidney beans red peas. So if u show a Jamaican some kidney beans and asked them to tell you what it is, they would say Red Peas. Hope this helped :)

As well, depending on where you are, rice and peas is made with the pigeon peas, or the red beans and it's referred to as the same thing. Some places with call it red beans and rice. Caribbean language is very relaxed.

What you should have done is poke it before you rubbed the seasoning over it. This will have allowed more of the seasoning to penetrate deeper into the chicken. You should also have rubbed some seasoning under the skin

I know that in Jamaica, we dont call Kidney beans by their real name, we call them 'Red Peas' and as such, call the dish 'Rice and Peas'. There is also a soup called 'Red Peas Soup' made with kidney beans. Rice and Peas can also be made with Gungo Peas (Pidgeon Peas).

Love having the inner pot stainless so I can use my immersion blender right in it without worrying about scratching. It makes potatoes great and fast! Still working on the vegetables, first time came out great, second time I did different ones and they were a little too mushy. Just need to adjust the time. I highly recommend this pot!!!

I purchased Nando's perri perri sauce online to make at home here in the US. I watched this video and both of the Nando's videos from sorted multiple times each. I had my butcher spatchcock the chicken for me and cut slices in the chicken rather than poke holes before marinating overnight. Otherwise I used this method. Dear God what Amazing rice! So creamy and delicious the flavors of the chicken married with the rice and peas so perfectly. I love it all so much. Thank you Sorted.

The way chicken was placed on top of rice while cooking in the oven is the best part , all the steam, the flavours from chicken to rice and then from rice to chicken makes an amazing delicious taste, loved this method .

Easiest crispy baked chicken wings: Marinade in yogurt and hot sauce (harissa, sriracha) for 2 hours-1 day Rinse off marinade, place wings on wire rack and pat dry. Season wings with black pepper and paprika, and place rack in a baking pan lined with foil for easier cleanup. Bake at 425 F for 45 minutes, serve with your favorite sauce. My favourite way to cook chicken is mediterranean inspired. It is oven roasted chicken thighs (you can also use the whole leg if you want), seasoned with salt, pepper and olive oil and then mixed with chopped olives, chopped rosemary and finely diced whole lemons, with the peel and all. Then simply roast it in the oven at about 180-200 C, until the chicken is cooked through. It gets a lovely earthy flavour from the olives and the rosemary, which is perfect in combination with the zingy taste of the lemon peel and the juice from the roasted lemons. I would love you guys to make this one day for the community, so easy, simple and delicious. It's perfect with a creamy mushroom risotto. I love to see your show! Best of luck from Denmark! :)

Do not know how I missed this one. I’m a good Irish Canadian with Jamaican roots who grew up with rice and peas as a main staple of Sunday roasts. On my long dead grandma’s grave I’d give the rice and peas a go. Jerk chicken was never a think in my child hood but I do like the idea of letting the drippings of the chicken drop into the rice. Curried goat, ox tail, stew fish or good old roast pork with Carl’s to sop up the dregs is the way to go.

The way they cut the chicken is called "butterflied" here in the US. I love cooking a whole chicken that way. I save the backbone, giblets, and since no one eats them in my house, wings, for both. I put it all in a bag and into the freezer, and once I have about the parts from three chickens, put it all in a crock-pot and cook for about 24 hours on low.

My favorite chicken dish is "Poulet a l'ail" from Guadeloupe. Rub chicken parts with garlic and cayenne, put in pan, squeeze lime juice over, add water until until the chicken is about half covered in liquid. Cook on medium high, turning occasionally until the pan is almost dry. Add a cup or so more water and scrape up the pan drippings to make sauce. I swear it is transformative.

My household's favorite chicken recipe is taking bone-in skin-on thighs and rubbing a mix of grated garlic, oil, salt, and smoked paprika (LOTS. Like 3 tbs) onto the chicken and then placing them on a rack over sliced potatoes and onions. Its a tweeked version of Alton Browns favorite dinner. :3

I like to make my jerk marinade from scratch. It enables me to tailor the level of spice for certain people in my family. Though I have never cooked a chicken the same way as you guys have done in this video, I still believe in using fresh lemon juice to wash the chicken with first. Not only does add flavour, which you made up for using the lime zest, it also kills any bad bacteria which could make it through the cooking process. I say could, and the chances of it happening are minuscule, but you read about food poisoning from incorrectly prepared chicken and this extra step can minimise that. Washing a chicken in lemon juice is a practice that most Jamaican people, and people with Jamaican heritage, I know do. I think it is partly based on fact, for the reasons on why to do it, but also culturally ingrained from parent to child. I know it was for me.

I go with a really simple seasoning combo when I roast a bird. I use salt, pepper, herb blend, then I smash some garlic cloves and put them under the skin, quarter a white onion and put that in the cavity. I then roast it on a rack over a bit of water in the pan so the bird is also steamed. It produces a really moist chicken.

I've found the best way to cook a spatchcock chicken is on the barbecue! Get a kettle grill and cook it for about an hour to an hour 30, ideally around 200/180 degrees. This leaves the chicken super moist! Tandoori chicken is a must!

Simple chicken thighs/wings with a rub of your choice (I use a small amount of liquid soy sauce+lemon juice with a paste of chilli, fresh garlic, lemon zest and lots of pepper+[optional]paprika) oven-roasted/pan-fried with a bit of peanut oil for a while... I don't look at the time, I just poke at it when I feel like it's about done. I prefer the roasted wings, simply cuz the charred marinade mingles well with the wings and they make great party food, LOL.

I boil enough water to cover a whole chicken , once water boils I drop the whole chicken in wait till it comes to a boil and cook for 20 minutes then turn heat off lid on. 2hrs later the chicken is ready to eat as you please. Very tender and best ever.

To add to songlyrics explanation about why it's called rice and peas is also because in the older days rice and peas was made with pigeon peas or a small type of peas that looks a lot like kidney beans but they are not. Now though most Jamaican's use kidney beans to make their rice and peas. Interesting way to make your rice and peas by the way but not very Jamaican, we traditionally don't put chicken stock in our rice and peas, just coconut milk, thyme, onion, garlic, salt and pepper, a nice unbroken scotch bonnet pepper, and a piece of salt pork, last one is optional. Kind of reminds me of how they make it in Trinidad minus the beef.

My favoriteway to cook chicken is on the BBQ. I marinate the legs on soy sauce, rice vinegar, korean cili flakes fir 2-6 hours or overnight, I dry them the next day - salt pepper and brown sugar and grill! I serve with tempura mushrooms and roasted asparagus

Jamie, I love my chicken plain and sloppy. A Chinese friend told me this method to cook chicken. 1 whole chicken in a pot, cover with cold tap water, cover the pot. Bring to the boil, boil for one minute. Keeping the pot covered turn off the gas,hob and leave it until the water has cooled. Don't worry it will be perfectly cooked through. You will have the most succulent chicken ever. Of course you can add ginger, soy sauce etc. Spud

Slow cooker. Whole chicken sitting on a bed of roughly chopped leeks, with some fresh garlic. Use the Leek top split in half like a blanket. Slow cook it . Then remove the leek tops they have done their job. Remove the chicken off the bones I usually keep the legs and thighs together and the wings + breasts, then I take off all the extra bits of chicken which usually come off the bones super easily pop the shredded chicken in with the stock, add some water and a bit more stock & mushrooms. The legs and stuff I grill or roast for 5-10mins from cold with some veggies for a roast. This is my way of making the most of a slightly more expensive chicken but also so delish. Also great in the soup is dried seaweed

Disclaimer: I'm not Jamaican, have never been to Jamaica, and have no idea what I'm talking about... BUT when I make jerk chicken with rice & peas, I use Pigeon Peas rather than kidney beans, which I get in the frozen vegetable section of my grocery store, because I think someone told me to do that once... or (more likely) I saw it in a KZbin video. They're delicious, and I have no idea whether they're technically peas or beans, but it makes me feel authentic when I do it.

Personally, I was taught to make rice & peas with pigeon peas (if you're using Goya canned beans they're called gandules). I always added added kidney beans for extra flavor anyway.

Questions: 1. When you jerk shrimp/ veges do you put holes in it? 2. Do you consider a baked chicken jerked because you poked holes in it so the sauce penetrates the meat? 3. Is a braised large piece of beef considered jerked because you made holes to get the flavor in? 4a. Is it really rice and peas if this not done the same way the country that calls it that? 4b. If no, isn't this rice just another variation of rice and beans and should be called that Note: Its called jerk in Jamaica because of the specific seasoning blend, same as you would do for barbecue chicken. Not sure about the world, perhaps that's the poking holes business.

Chicken Marbella from the Silver Palate Cookbook is best chicken. Marinade and then cooked with capers and prunes. Sounds weird but tastes delicious.

My favorite chicken is to take the thighs, season with salt and pepper. Put them in a hot skillet skin side down and cook over medium to medium high heat for 30 to 45 minutes. If the chicken was injected with a lot of water, drain off the excess water after about 10-15 minutes so chicken fries and not boils. Do not turn the thighs over; cook skin side down all the way. Skin will be super crispy. You probably want to cover the pan with a splash guard to keep grease from flying all over.

I like to make chicken teppanyaki(?) and add different vegetables every time. But basically chicken filet sliced really thin with garlic and union cooked with wok oil and soja sauce
