If you want an authentic 70's New York Baconeggancheezeonnahardroll (we talk fast in the city so it sounds like one long word), cook the egg over easy, once flipped put a slice of cheese on top of the egg, then put 3 strips of crispy Bacon and then the egg and slightly melted cheese on a New York style Hard Roll which is a Kaiser Roll that is baked, then brushed with butter on top and sprinkled with some Poppy Seeds then baked some more to harden the crust slightly - slightly crunchy outside, soft inside. Then, when it is all put together, served wrapped in foil, you press the Hard Roll together so the Bacon breaks the soft yoke and melds into the "sangwhich" - as we say in the Bronx. That broken yoke... that's the flavor! Oh, and don't forget a "Regula Cawfee tago" in a Greek Diner style "We are happy to serve you" paper cup with a white plastic lid and a tab you pull up and snap back onto the lid to make a sipping hole. In the New York Tristate area, a Regula Cawffe is brewed medium roast coffee with milk and 2 sugars. There is sometin' about the "wadta" in New York that makes it better. Fagettaboutit!

I’m from Texas and lived up North for the past 4-5 years. I always missed the Texas breakfast tacos, burritos, etc SO much! I grew accustomed to the BEC and now that I’m back home down South I miss it so much too! It’s such a simple thing so I now make it myself all the time but nothing beats it from a true bodega.

That sandwich looks delicious. However I have to say as a former bodega employee grown up in Queens New York, that is not how you make a legit New York bodega bacon egg and cheese. You literally just cracked the egg on top of the griddle and break the yoke drop one slice of cheese salt pepper and put on a roll. This is more like an omelette

One final step... I would wrap it in some foil or parchment paper for a couple of minutes right after it’s put together to let it steam and let the flavors meld (and this way you can put the cheese on top the way the bodega guys do it 😊)

thank you for pointing that out. Not many people know that's 1 of the things that makes the bacon (sausage) egg and cheese so awesome in NY Metro area and beyond. And it's gotta be a hard roll, not toasted.

That's why you wrap it up to eat at work or make it the next day so you can just warm it up again and enjoy. I wrap mine in paper towel and then foil. Remove the foil and reheat.

No ny or nj deli I’ve ever been to would melt the cheese in the eggs and do the fold over. They put the cheese atop for the last 30 sec and let it soften. But your way is nicer. Salt, pepper, and hot sauce on mine.

In my opinion baking bacon is the only way to go when you get it cook it at 350 till 80% done. Refrigerate it and then when you want some throw it in a pan and bam. Perfect bacon in 2 minutes or less.

I use regular sliced wheat bread and like I butter it and put the cheese on for it to melt, then I butter the other slice of bread and form my sandwich

A few things... Most places will do bacon in the oven because it's easier to do large quantities... They usually throw them on the flat top when making sandwich which makes it crispier. Love your emphasis on light scramble, eggs done on the flat top and usually just smeared which makes them streaky. Most places put the cheese directly on the roll and it melts from the heat after being wrapped it paper/foil. MUST BE Boars Head Yellow American! Salt end pepper on eggs while cooking, ketchup on CHEESE-SIDE of roll for bonus points. Lightly toasting the roll with butter on flat top is the absolute pinnacle of breakfast sandwichdom. I'll overlook some shady shit if they go that extra mile.

breakfast sandwich in NY is one of the best - many I know always want it because they cant get it where they live However it does not have to be scrambled eggs - Fried or over easy is my favorite bacon agreed should be medium American Cheese yes but think about trying 2 cheeses

Sure you can make it at home, but the rolls will never quite the same. The water in NYC and Long Island is just better and makes all baked goods better. This is coming from someone that lives at the other end of the state (300+ miles away) who's mother is from Long Island.
