Would you happen to know what to do when you’re adding new tags to the document but it doesn’t work? What could be wrong ? I followed along with your video but nothing worked.

Hmm. Perhaps its an Image based document? Sometimes recreating the PDF can help or doing something like Print to PDF before remediation.

One warning I'd add for those following along with same techniques used here. Make sure that if you've tested by entering content in form fields, to look for the "more" in the prepare form and then choose clear form. Finally, save again. I'd seen a case or two where even if you go back and delete that test content in the form fields, they get added as sort of placeholder text. Your mileage may vary.
