In this video I show you how easy it is to make a Spelt Sourdough Starter. You just need flour, water and one week. Each day the starter looks a little different and it does not take long for it to start bubbling and smelling sour. Don't worry, that is exactly what we want :) This is the third video of my Spelt Bread Series, the next one coming up soon!
The process:
Day 1 morning
mix 50g spelt with 50g water
Day 2 morning
discard 2/3 (66g)
add 50g spelt with 50g water
Day 3 morning
discard 2/3 (!100g!)
add 50g spelt with 50g water
Day 4 morning
discard 2/3 (100g)
add 50g spelt with 50g water
Day 4 evening!
discard 2/3 (100g)
add 50g spelt with 50g water
Day 5 morning
discard 2/3 (100g)
add 50g spelt with 50g water
Day 5 evening
discard 2/3 (100g)
add 50g spelt with 50g water
Day 6 morning
discard 2/3 (100g)
add 50g spelt with 50g water
Day 6 evening
discard 2/3 (100g)
add 50g spelt with 50g water
Day 7 morning
discard 2/3 (100g)
add 50g spelt with 50g water
-- done, begin baking or put your starter into the fridge :)

Really enjoyed, followed your guidelines and it worked. One thing to note is that I did use Organic whole spelt flour and the water was at the same temperature and my kitchen. Saved the video in my Sourdough Essentials playlist. Thanks once more!

But then what do you do after the 7 days?? How many times per week do you feed it and i’am still supposed to throw out 2/3 ???

I’m so blessed by the complete instructions about Sourdough spelt flour. I was looking for this long time ago and it seems that no many people do it. God blessed you and family as well ! I have some questions. I did the stater and finish it on the seven day. And put it on the fridge. Today is Tuesday day 9 for my starter I’ve been feeding it twice a day and put it back on the fridge. Note : I made it with only ww spelt flour cuz I don’t have the white one since it’s not easy to find it at the store. I don’t see it grows I put a band around it. But doesn’t grow , do you know why? Another question is can I start using it even though it’s not to strong or that’s what I believe to levain a bread? Thank you so much ! Your channel it’s my favorite now ❤

If you put it in the fridge, you only feed it once a week approximately.

This is great! Thank you! Why do you discard 2/3? And what do you do with it? Also, does the size of the jar matter? I have a 3L one lol

Because microbes are living organism just like we are. They digest the flour and water and then fart (hence the bubbles in the sourdough), so that’s why you have to take out their waste and feed them new clean food.

Some people do pancakes with it. Literally just on the pan with some butter if you want, add some scallions and enjoy!

hi, what do you do with the discarded flour mixture? is it a waste? how many grams of flour does this take to make one whole baked loaf of bread then? thaks

So for that week you have thrown out 866g of speltflour. How do you know that it's exactly 66g you have to throw out, and then 100again, to come down to 34g of sourdough total? Just curious of how precise the measurments are. Would love to know. Thank you! I'm definitly going to try this! Can't wait.. i've had soo many failures with sourdoughs! Especially einkorn!
