How to make a traditional Manx smoked herring; a kipper.
Paul Desmond here speaks about the process, what to watch out for, and some of the tricks and tips of the professionals.
All of this he learnt from decades in the business in charge at Moore's kipper yard in Peel.
Included in this film is unique film footage of the smoking process which remained almost unchanged in over 100 years at the Isle of Man's only remaining traditional kipper yard.
This interview with Paul Desmond was filmed in 2022.
It was made as a part of the filming for 'Spuds and Herring: A celebration of the Peel fishing industry.'

Is the herring fishery getting harder to catch or is there just less demand? I would have thought there'd be increased demand for such a great product with the modern supply chains. I noticed that 1 commercial brand in canada switched to using "sardines" in place of herring in their smoked products.
