I always order Agedashi tofu when we go and eat at our Japanese restaurant, and they are always so tasty ,soft but crispy and crunchy .Do you use silken tofu or medium firm tofu? I found very soft tofu breaks easily! Eggplant is always delicious .Scallion ,ginger and daikon with chilli as relishes go well with the dishes.

That’s nice! Agedashi tofu is so popular😁 I use soft~medium firm tofu. I don’t use hard tofu to make agedashi tofu. You’re right. They are very good partners!
