For anyone doing this themselves, I would recommend ether buying or making your own pumpkin puree. Add a few handfuls of wheat or oats to the mash. Then you want to dose it with amylase to break the starch down into sugar. You can macerate or gin basket the spices. The overall flavor will be much closer to an actual pumpkin pie while costing a fraction as much.

@@bdog5369 There is no flavor value for alcohol in baked flour with a bit of fat(crust). There is a great deal of wild yeast & other microbiology that will develop unwanted flavors though. Making it essential that the mash is pasteurized.

@@bdog5369 You miss understood they literally make pumpkin pie filling in a can with all the spices, sugar, and flavorings. People buy frozen pie crust add canned pie filling top with nuts. It's a bit like a good brownie mix. It's better than something sitting on a shelf not as good as homemade. For this though a can of pumpkin pie filling is about $2-3 verses a $10 pie for roughly the same amount of pumpkin. And it has not dried out so less water is needed meaning more flavor. If crust & cream are required add hot par baked crust & powdered cream to the mash. Neither is going to carry flavor though to the alcohol, but at least awful flavors will be avoided.

@@bdog5369 Organic options are available, but most brands have pulled everything but salt out of their recipes. Because if handled properly preservatives are unnecessary, and viewed extremely negatively by the public. I worked in a premium in-store bakery made over a thousand pumpkin pies the weekend before Thanksgiving. The ingredients weren't any better than the canned or frozen product. Simply said very few stores make pies from scratch the margin is not high enough. As far as pumpkin content it's on the ingredients list if other veggies are being used, & people read label. So yet again most brands don't do that anymore. They where never going to home bake a dozen pies so that option is unavailable meaning canned is by default the highest quality option over frozen & store made.

@@bdog5369 Are you sure you aren't the newbie here? They aren't always that literal. For instance, they substituted watermelon juice for whole watermelons in the watermelon video. They could have easily used canned pie filling instead of whole pies and not have taken anything away from the video. I think they should revisit this one in the future to try that and see if it changes anything.

When Briana said that Rex's hand smelled like a latex glove that had been handling salami, I think we all knew what he'd been up to. You guys love the shortbread biscuit note in Irish whisky so why not try to distill that or Werther's Originals. Any whisky as a gift is great, but something I haven't had is always an adventure, cheers!

@@tristenheckman I'll own that I watch this channel because I love whiskey, and the personalities. but my brew knowledge is pretty limited to Mead. Pectins often suck in mead, even with pectic enzyme. But in a brew for distillation i can see how it might be less of an issue.

What about a tea whiskey? Pick a tea and a fruit that matches it so that the sugar comes from the fruit, but the tea herbs add additional flavors? Now, I'm not sure if you'd want to steep the tea early on, or later on, or it be an afterthought blend, but I'm interested in watching you all do it! :D

I did some strawberries a few months ago. I thought about adding some kiwi. Just avoid bananas! During fermentation the go nuts and make a huge mess!

From a purely visual standpoint, that fermentation mash (wash?...I don't know the term for it) is one of the nastiest things i've seen on the channel. Having said that, the "Will it Distill?" experiments are some of my favorite things you guys do. And since this is the season for pumpkin pie, and ALSO pecan pie, you guys should do pecan pie next.

How about trying to distill minestrone soup? Recipes vary but you will typically find lots of starch sources here (carrot, potato, beans, pasta, squash etc.) in addition to lots of flavor adding ingredients, this would obviously need an additional step to the prosess, mashing with enzymes (and probably boiling it for way to long for a soup), but this should be quite an easy step given the resources available to you ;) I would like to see this! Anyhow, another great episode, always a pleasure to watch. Magnus

Sweet Potato Pie might have a better outcome than Pumpkin - just saying - especially if it's home made... though I suspect the biggest problem is the fat and protein content (eggs, butter, etc.) I'd bet money that you could accomplish a pumpkin (or sweet potato) pie spirit that actually tastes good if you put together the right mash (as opposed to just fermenting grocery store pies). Side note: I'm kinda surprised that you guys haven't fermented mangos yet. They're enormously high in sugar and one of the most flavorful fruits on the planet. Mango wine is amazing - though I do wonder if those flavors would translate over to a spirit without becoming too one-dimensional.

At the local Trapper/Mountain Man Rondevouz reinactments, the old timers make a drink they call Apple Pie, made from Everclear, Apple Juice, and Cinnamon sticks. You mix them all up in a big jug like Kaluha and let it sit for a year, then put it in to a clay whiskey jug. Tastes like apple pie and knocks you on your butt. LOL

Christmas gift? Oh yeah. I had this rye (Mother Earth brand Carolina Rye) while in the Outer Banks NC. 96 proof and SO flavorful. The distillery makes gin & beer. But they NAILED this rye. Mm!!

4 Full Weeks in December... go big or go home: Week 1 - Candy Canes Week 2 - Ginger Bread Men Week 3 - Fruit Cake Week 4 - Store bought non-alcoholic Egg Nog.... then spike some of said egg nog with the distilled spirit.

Next time distill some "Fermented Barrel." Use some cellulase enzyme to turn the wood of a wiskey barrel into fermentable sugars, ferment that, and distill. See Nilered's "Making toilet paper moonshine" video for a fiber-to-sugar example. kzbin.info/www/bejne/rF7QiH6VoMiNg9U The only exception: don't "pre treat" the wood(pulp) for the brew. Since barrels are already food-safe, and really the interesting part will be the flavors trapped in the wood, it should just be shredded into pulp and "Cellulase'd" for a while, maybe even at elevated temps like 50C to speed up the reaction and inhibit other microbes from eating it. I already know this is going to be reaaaally hard to pull off, but it will be completely unique and meta.
