Ingredients:
• 1 cup mixed dry fruits (raisins, currants, chopped dates, chopped apricots, chopped figs)
• 1/2 cup chopped nuts (walnuts, almonds, pecans)
• 1 cup all-purpose flou
• 1/2 teaspoon baking powder
• 1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
• 1/4 teaspoon ground cloves
• 1/2 cup unsalted butter, softened
• 1/2 sugar

• 1 teaspoon vanilla extract
• 1/4 cup rum or brandy (optional)
Instructions:
1. Prepare the Fruits and Nuts:
• In a bowl, combine the mixed dry fruits and chopped nuts. If you're using rum or brandy, you can soak the mixed fruits and nuts in it overnight for added flavor. If not using alcohol, you can skip this step.
2. Prepare the Cake Batter:
• Preheat your oven to 325°F (160°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
• In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and cloves. Set aside.
• In a large mixing bowl, cream
• together the softened butter and brown sugar until light and fluffy.
• Beat in the eggs, one at a time, mixing well after each addition.
• Stir in the vanilla extract.
3. Combine Wet and Dry Ingredients:
• Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
• Fold in the soaked (if using alcohol) or unsoaked mixed fruits and nuts until evenly distributed in the batter.
4. Bake the Cake:
• Pour the batter into the prepared cake pan and spread it evenly.
• Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center of the cake comes out clean.
• Allow the cake to cool in the pan and transfer to a wire rack to cool completely.
5. Serve:
• Once cooled, slice and serve the dry fruit cake. It can be enjoyed as is or with a cup of tea or coffee.
