The guy who trained me to do the twisting part of the process, told me to "throw 2 hook Punches at the same time" I worked at auntie anne's for 2 years and the technique served me well the whole time

Thank you for being in my childhood . :) I grew up eating these ALOT. My family traveled alot so we always went to the airport. After we have checked our luggage, We would go to our gate. My mom would always ask, “Do you want a pretzel?” I would always say, “Yes!” :) I always got the pretzel bites with cheese dip. So good!

There used to be an Amish farmer’s market down the street from my house. They had THEE best chicken and an Auntie’s Anne’s shop in front of the store. I used to watch the cooks make the pretzels on the spot. Such a cool time in the 90s. Now it’s a daycare 😔

kuroshinigami no, the special solution is lye water. It's a food grade lye but still corrosive mix that will burn your skin. Hence why the women is wearing gloves. The bicarbonate of soda mix is safer to use but lacks he flavour the lye mix can give.

I worked at pretzel maker as a teen in the 90’s. I wasn’t shown that trick, I figured it out because it took to long to do it all on the table. I went as far as “jump roping” the dough to stretch it out before the mid-air twist!

Baking soda 2 tsp. Bowl of water dissolve and add melted butter, dip / then lightly touch on towel / then cookie sheet. 375-400 10-12 min. Or till golden . Will rise in oven . Brush with butter and sprinkle salt / or cinnamon sugar. Yum

My favorite is the pepperoni pretzel it reminds me of how my lactose intolerance can't take chesse so when I want a pizza I go to the mall and literally run to the Auntie Anne's Pretzel shop with enough money to buy two of my favorites with a large soda. The special solution can be either culinary lye or baking soda and water. Either work just fine. This give the dough the nice brown color while baking.

@oilerman313131 Actually, the dough was fully risen. She used a half batch for this demonstration, which is why the dough didn't crown outside the bowl like a fully risen full batch should.

It's probably a lye solution (the original name is Laugenbrezel, Laugen means [basically] lye). Baking Soda is a less dangerous substitute. You can find a L.A.Times article about it : google for "LATimes Making a soft pretzel is a knotty challenge".
