Thank you for your comment and kind words!!! Yes, you can absolutely use fresh oregano. When you grow it yourself, you have control as to the way you use it. You can even hang it to dry as well. The choice is yours. 👍🙏🏼💪✌️🙌

Used this on some chicken. Put it in a ziploc bag with the chicken and let it sit in the fridge overnight. It made great tacos. So simple.

If I marinate pork cubes for 24 hours in this mixture would that be long enough to make it tender and absorb the flavors? Like a real greek BBQ souvlaki tender garlicy meat

hey dud if i marinate the chicken with olive oil, if i want to cook it on a pan do i still need to add olive oil in the pan?

Hey Caryn, thank you for your question. I usually get my oregano in SW Greece, in a little village, on a rocky hillside and then I smuggle it in like most other Greeks. But you can get it any place that sells Greek oregano on the stem...

My deal is that I want to get the right oregano and the right olive oil. I made the mistake of buying a jar of oregano that said, "mediterranean oregano." It smelled spoiled. It totally ruined a dish. It was inedible as a result. The usual "suspects" from the grocery store just do not taste like the oregano I get my my local Greek joint. They will sell me olive oil, but aren't interested in telling me where to get good oregano. My problem is, I am not sure what to ask for!

Thank you for your question & comment. The best Greek olive oils are not the ones available in mainstream food chains, but rather producers/importers direct. As for the Greek oregano, there really is no substitute for mountain grown. Chances are the stuff you've been getting has been sitting in a plastic bag for months and months. Maybe try ordering from a reputable spice house? Or grow your own. Incredibly easy and dries well too!
