This is how I was taught to bake it when I was a little girl. People are so in a rush. Old time people would knead sweetbread by hand. Thank you so much for sharing. Sweet memories 🙂

Bajan living in Barbados and i usually mix by hand as well no machine can give you the texture you want. I usually start wet melting my butter and shortening and adding my water and essence and spices before the flour and baking powder.

I just came across your channel, I am going to try your recipe. I usually melt the fat and when it cool down I make a well and pour it in the middle. Also the fruit I add flour and baking powder to the fruit to stop fruit from sinking, thumbs up God blessed your family, happy holidays

Looks good. I'll give it a go. My late mother ran a cafe in Barbados. Here in England she would make a kitchen table top of mixture for about 15 cake tins for family and friends at Christmas and Easter. In the early days she would use Irish salted butter. A bakery l visited in Holetown produced some bread as good as she did which is great compliment.

Does anyone flour their cherries and raisins before adding? Mum taught me to do this as it aids in the fruit being disperse throughout the bread and not sinking to the bottom. I also rehydrate my raisins as I like them plump.
@bajanfamilyabroad
@bajanfamilyabroad 3 жыл бұрын
Yea my mum and gran did this but only when baking cakes. Sweetbread is much more dense and the raisins are unlikely to sink. None of my raisins sink and they are nice and juicy still. Could possibly be the method used if they do? I personally find some ingredients are different here in the UK so it may also depend on that as well 🤷🏾‍♀️

Yes girl, too many people are now baking the sweet bread using the hand mixer and then the bread crumbles or soft almost like cake, I hate that. This is the correct texture here

hi, what did you put in after you put in the coconut water? was it evaporated milk?
@bajanfamilyabroad
@bajanfamilyabroad 2 жыл бұрын
Yes it was, but that’s optional you don’t need to use milk if you don’t want to (or have an intolerance) you can use another alternative or use only the water.

The real, old-time recipe does not use eggs or milk in the Bajan Sweet Bread /Coconut Bread. However, more modern recipes add milk and eggs. 💕

@bajanfamilyabroad
@bajanfamilyabroad 2 жыл бұрын
Hi Christine, thanks for watching ♥️ I think your phone autocorrected what you typed. If you mean the cherries I put those on at the end just before I put the sweetbread in the oven. I just cut them in half and pop them to the top, if you mean the raisins, during the baking process the raisins rise to the top. Hope that’s what you mean

Hi there I would prefer fresh coconut instead of dessicated coconut not the same results when using dessicated coconut real bajans use fresh coconut. Just making a point . I never see my bajan friends and family using dessicated coconut.🇬🇧

Hi - Thanks for your comment. I can only use what’s available locally to me here in the UK. Fresh coconut is always the best option but even with the desiccated coconut it still tastes authentic. As the older ppl would say “When yuh ain’t got horse, ride cow”.

Hiya, check out the description box. I’ve included all the quantities there as well as the instructions, the only thing I don’t have measurements for is the water/milk and the cherries/raisins, since I estimate that based on the texture and on how many raisins I want in the sweetbread. Hope that helps.

I bake bread at 300 degrees which does not allow the bread to be too brown and crusty because of the fruits
